Bunny Cakes: Carrot Cake Cookies

These are an absolute favorite in our home and have become an Easter tradition. My BFF introduced me to the paleo version of these cookies and I was hooked. Since we are not paleo, I I began to modify them over the years to find the perfect recipe for my family. The best part is that they are relatively healthy and have room for variation. It was just this year that my family decided to officially name these: Bunny Cakes. This year, my 9 year old daughter made our Bunny Cakes all by herself!

Bunny Cakes

I top my Bunny Cakes with real cream cheese frosting using this recipe and reducing the powdered sugar to about 1 cup - we like the sour taste! For those who are dairy free or have other allergens, the lemon cashew frosting in the original recipe is a great substitute - my nieces and nephews loved it.
